If you shopped in person you had the option to buy a card to write your friend about your gift. If you shop by mail include a note about your gift in your holiday card to your friend.
Can I just make a donation and not honor anyone?
Yes, of course! That's exactly what many people do.
Can I give an amount not listed by the charity?
Yes, of course. All donations are welcome.
